This increases the sugar concentration. Fermentation occurs on the skins in stainless steel at a constant temperature of approximately 18°C. During this time the skins are stirred twice daily for five minutes for the first couple of days and then once a day for the final phase. Fermentation is stopped leaving residual sugar present in the wine. Before bottling it is aged in oak for 28 months.\u003c\/p\u003e\u003cp\u003eCharacteristics: Deep red in colour with a rich sweet sultana nose. An extremely complex palate of fruit, oak and the oxidative handling used in vinification.
