Freshness is fundamental. As one creole expression goes: \u003cem\u003e“the cane should have it’s feet in the fields and it’s head in the millâ€? \u003c\/em\u003eIn other words, once cut, the cane should be ground immediately to capture the most expressive juice. That freshness can be preserved even when the rums are oak-aged. This vintage-dated bottling combines eleven carefully selected barrels containing rums from the 2010 harvest. First matured for more than 10 years in American oak, a secondary maturation followed in 350 litre French oak barrels for 18 to 24 months. The rum ends up with a warming overlay of almond paste and mandarin confit aromas and flavours. Perhaps bottled not a month too late, it has a dry, natural feel, good freshness, and an oak-fruit balance that’s similar to many Armagnacs.
