Maturation takes place in French 500 litre oak puncheons with wild yeasts from the vineyard providing a natural fermentation. The wine is left to develop in barrels for a period of 12 months.Brilliant pale straw colour with highlights of green around the outskirts and a watery hue. Expressive white peach, nectarine, dried honey and cashew scents sail from the glass with ample intensity followed by some biscuity nougat and spice notes. Rich, concentrated and creamy textured, the palate is layered with white peach, nectarine and dried honey flavours. Cashew, biscuity nougat and spice elements are interspersed throughout the back half.
