The grapes are all hand picked and grown to a yield of 3.5 tonnes per acre. Fruit is first gently whole bunch pressed and predominantly fermented in stainless steel with cultured yeast. A portion (30%) is fermented with wild yeasts in old French Barriques, which contributes additional layers of complexity and texture.Brilliant very pale straw colour with a subtle greenish tinge around the edges and a watery hue. A mix of herbaceous gooseberry, passionfruit and lime scents sail out of the glass with some grassy asparagus and delicate spice notes lending further interest. Mouth filling passionfruit, gooseberry and citrus flavours are delivered with terrific intensity and drive. Lime, green apple and herbaceous grassy elements extend across the back half. Crisp acidity with a long, mouth watering finish.
