Harvested by hand, the best grapes from the parcel were selected for this cuvée. Vinification with whole berries in 2017, and destemmed in 2018. The grapes are moved into vats by gravity, followed by gentle maceration. Two years of maturation on lees in barrels that have seen two to three wines.
