On the nose: it is fresh and aromatic, as expected of Loire Valley wines made from Sauvignons Blanc, with elderflower, gooseberry, nettle and herb characters, plus some lovely citrus notes too, and passionfruit. On the palate: it’s light to medium-bodied with the naturally refreshing acidity of Sauvignon Blanc, and lots of herbaceous and citrus fruit flavours. At 12.5% alcohol it’s very easy to drink, and is not too rich. While not in the same league as Sancerre or Pouilly-Fume, also from the Loire, it’s juicy, dry, crisp and refreshing, and a great food wine.\u003c\/p\u003e\u003cp\u003eFOOD PAIRING, STORING AND SERVICE: Christophe Godet suggests serving the wine cool at 8 degrees, with pork (eg Andouille sausages from Brittany, to the north), fish (salmon and cod are usual matches) and seafood dishes, or goat’s cheese for a vegetarian option. Sauvignon Blanc is fairly versatile and so asparagus, avocados, artichokes, salads or green veg all complement the herbaceous and citrus quality of Sauvignon Blanc. As well as tomato and herb dishes.
