Obsessed with his favourite spirit, he started out by attending a few masterclasses, before diving headfirst into the world of pot stills. Gilles trained in Cognac, then headed up to Scotland, where he gained solid experience â€?notably at Springbank â€?honing his skills in traditional distillation. During his time in Scotland, he also fell for craft gins, discovering the category during a fateful gin-soaked night out. Back in France, Gilles designed his own stills and built the distillery from scratch, entirely in his image.
