It grows exclusively Xinomavro, a refined variety of Central Macedonia. The harvest for making wine is harvested in late September-early October, depending on climatic conditions and degree of maturity. The fruit does not separate from the ridges. Fermentation is carried out in stainless steel vats. Then the wine is aged for 12 months in French oak barrels and at least two years in the bottle.
