Since its foundation in 1961, his estate has repeatedly set the benchmark for the grace and power we come to expect from Barolo today. But it wasn’t always this way. Tradition plays a huge party in the winemaking techniques of this region, that is until Aldo came along. Breaking with old methods of the past, he set about modernising the techniques, focusing on better fruit and shorter maceration with a view to making Barolos more approachable in their youth. This was an estate that at one time had the capacity for 200,000 bottles but instead they choose to reduce this to 80,000 as a mark of their commitment to quality rather than profit.
