Planted at the foot of the cliff, Bernard’s organically grown vines – aged between 20 and 60 years – are sheltered from the cold northerly winds. Another beneficial aspect of this site is the abundance of surface stones which radiate heat and help bring the fruit to full, plump ripeness. The grapes are hand harvested in small batches and gently pressed prior to ageing in large, old oak barrels, although Benjamin used one new oak barrique to add a subtle, toasty, vanilla dimension to this fruit driven white.
