Sans The Delegat’s Reserve wines are fermented using neutral yeasts, just as are their Oyster Bay counter parts.Fermentation takes place at relatively cool temperatures of between 12-15C and the wine spends 12 months on yeast lees contact in a combination of Allier, Vosges and Troncais French Oak.Bright straw colour.Complex yeast lees, biscuit nose. The palate displays considerable complexity with biscuit nutty fino flavours dominant, very long with a slightly aniseed end palate.
