Sans The Saltram No. 1 Shiraz is the flagship wine for the Saltram label with the fruit being sourced from low yielding old vine vineyards in the Barossa Valley (85%) and the Eden Valley (15%). The 1999 vintage experienced a warm growing season which resulted in fully ripened Shiraz fruit with concentrated colour, flavour and tannin.The grapes were de-stemmed then fermented in traditional 8 tonne open fermenters, under ‘heading-downâ€?boards, pressed, then transferred into new and seasoned French (60%) and American (40%) oak and Hogsheads where it was matured for 24 months
