Sans The Jester Shiraz is named after Richard Tarlton, who was a favourite amongst the Jesters to Queen Elizabeth I. The fruit for the wine is sourced from the Willunga district of McLaren Vale, where the heavy grey loam soils over sandstone, intermixed with black Biscay clay, combined with the maritime climate, contribute to an even ripening period and the development of rich fruit flavours and ripe tannins. Ageing takes place in a combination of 2-4 year old French oak (the same barrelsin which Mitolo’s flagship GAM Shiraz is previously matured) for a period of 9 months.
