2010Shaw&SmithM3Chardonnay

Sans Fruit for the 2010 vintage was sourced primarily from the Shaw and Smith M3 Vineyard at Woodside. The vineyard was planted in 1995 and takes its name from owners Martin Shaw, Michael and Matthew Hill Smith. The was barrel fermentated in new, one and two year old French barriques. 100% wild yeast fermentation was used plus partial malolactic fermentation for complexity and mouth-feel. Aged for 9 months in French barriques, the lees were stirred weekly to build complexity.
