Sans The name Woodcutter’s stems from owner/winemaker David Powell’s several years spent working the Scottish Highlands as a lumberjack in the Torbreck forest. The fruit for the Woodcutter’s Shiraz is sourced from hand harvested and hand tended plots throughout the Northwestern Barossa Valley and fermentation takes place in a combination of cement, wooden and stainless steel vats for 6-7 days. It is then basket pressed to well seasoned hogsheads and French oak foudres for 12 months and bottled without fining or filtration.
