Sans From an ideal vintage in Heathcote that saw low yields across all clones of Shiraz and grapes harvested in perfect condition. After partial destemming, each parcel was fermented with a high proportion of whole bunches (approximately 75%) utilising ambient yeasts. The resulting components were aged in French oak puncheons (30% new) for 10 months. They were then racked, blended together and returned to barrel for a further 6 months maturation.
