Sans Arguably the star of the village of Chassagne-Montrachet, Jean-Claude Ramonet is the third generation to have run this truly great estate; carrying on a great reputation, rather than building or re-building. Fruit from vines under 18 years old is excluded from the domaine’s cuvées, and yields are severely restricted. The wines are vinified using traditional methods and then aged in oak (33% new) for 12-15 months. The Montrachet is aged in 100% new oak. There is no battonage but there is extended lees contact prior to the first racking.
