Sans All of the fruit for Olivier Klein’s organic Un Air Côtes du Rhône is drawn from the estate’s highland, sandy limestone vineyards set around the hamlet of Sabran. Everything is picked by hand, sorted, and then mostly destemmed. The ferment is natural and the wine then spends seven to eight months in concrete tanks with no fining and only a light filtration prior to bottling. Grown at 250 metres above sea level, the 2016 is a wonderfully aromatic, supple and delicious Côtes du Rhône.
