La Rougerie is a single vineyard considered to be the ‘Grand cruâ€?of Domaine de Pallus. Vineyards are planted on south facing slopes. Old vines planted in 1952 and 2007 with low yields of 30hl/ha. Fermentation of 95% of the grapes is carried out with the stems in an open-wooden vat, with maceration lasting between 25 to 30 days. The wine is aged in 100% new 228L Burgundy barrels for 18 months.
