Sourced from south-facing vineyards across the Côte de Beaune, often situated just 10â€?00 metres from village and Premier Cru sites. The wine is fermented with native yeasts and aged for 10 months in French oak barrels (Pascal prefers Rousseau barrels or larger 500 L casks, and employs no bâtonnage). Inviting aroma of small red and black fruits—strawberry, cherry, blackcurrant and blueberry—layered with cooked prune, peppery spice, subtle woodland, moss and mushroom notes.
