Sans Spring winds during budburst led to low vine yields, while cooler temperatures extended the ripening period, this combined with the dry conditions produced some excellent quality fruit. The 2021 Chardonnay, a blend of 36% Coal Valley, 34% East Coast, and 30% Tasman Peninsula, was hand-picked, chilled, and whole bunch pressed into seasoned French oak (300L). It underwent wild fermentation with some solids included. Half of the wine was sulphured after fermentation, while the other half was stirred without SO2 for 3 months. It spent 9 months in oak before blending and bottling.Alc. 13%
