The vineyard’s elevated location near Monthelons ensures freshness even in warm years. Fermentation lasts 12-19 days in thermo-regulated concrete vats, with a 3 to 5-day cold maceration. During fermentation, the wine undergoes either pumping over or punch-downs. Aged for 18 monthsâ€?2 months in oak barrels and 6 in vats. Fresh red fruit aromas, with vibrant cherry and raspberry notes. Its lively acidity and supple texture are complemented by a firm, structured finish.
