Product

Grapes are hand-harvested from 47-year-old bush vines, planted in 1976, with low yields of 2–3 tonnes per hectare. Grapes were gently crushed, pressed, and settled overnight before being transferred to older French oak barrels for fermentation, using a combination of ambient and cultured yeast. Aged for 11 months on fine lees. Only 720 bottles were produced.Aromas of ripe peach, quince, and orange blossom, with a hint of honeycomb. On the palate, it is vibrant and textured, with flavours of baked apple, lemon curd, and subtle vanilla.
