Sans Winemaker Waldo Smit sourced fruit for this Chardonnay from 20-year-old vines grown in the Beechworth township of Baarmutha by the Iwanuch family. Hand-picked fruit was gently pressed to 500 litre French oak barrels (15% being new) for fermentation, followed by 10 months maturation. Regular lees stirring took place and full malolactic conversion was encouraged to build textural qualities.
