Sans Alpha Box & Dice, located in McLaren Vale, is undertaking a “Wine Alphabetâ€?project where each ‘letterâ€?represents a distinct winemaking venture, aiming to create a comprehensive collection of wines that showcase the various styles and grape varieties found in the well-known wine regions of South Australia, such as McLaren Vale, Adelaide Hills, and the Barossa Valley. Gently pressed to tank where it is fermented cool and matured for 6 months on lees before being blended with reserve wine. The wine is secondary fermented in tank (charmat method) to achieve carbonation, before being transferred to bottle.
