Ancestral was the first technique of producing sparkling white wine (It is also called Pet Nat); The first fermentation stops in the vat and the second fermentation happens in the bottle. The released carbon makes it a bubbly. Great refreshment and as an aperitif, delicious, refreshing with soft, crispy bubbles. (If you prefer your bubbles even more subtle you can leave it open in the fridge for 10-20 minutes, it will delight you).
