STORY BEHIND THE WINE

The making of Aviation Gin begins with a careful infusion of botanicals – cardamom, coriander, French lavender, anise seed, sarsaparilla, juniper, and two types of orange peel – which are macerated in neutral grain spirit for 18 hours. The resulting macerate is then distilled with pure water, and through a meticulously controlled cut, only the “heart of the spirit” is collected, ensuring exceptional purity and balance. Finally, the heart cut is blended and bottled, reduced to the perfect 84 proof with pure water before being filled, capped, and labeled – ready to share the smooth, aromatic character that defines Aviation Gin.
