Everything about the process in making this wine makes perfect sense. First off, the quality of Negroamaro from Salento shines. Further still, the use of the passito method (leaving the grapes to partially dry on the vine) softens the tannins and adds a mouth-filling generosity to the wine. With the heat and this vineyard method, there’s a danger of an overly jammy, sticky wine style. But the local sea cools Salento’s vineyards each night, allowing the fruit to hold onto its natural freshness.
