A film of yeast called ‘flor’ is allowed to develop on the surface of the wine and protects it as it ferments, which goes to create the distinctive oxidative profile of sherry (Which is made in the nearby Jerez). As this natural white wine is not fortified, as is the normal practice with sherry, this wine expresses itself on a much lighter plane – sweet ripe apricots and honey please the palate supported by enticing oxidative notes. A magnificent experience. We recommend serving this chilled after dinner with some cheese or even a sweet dessert.
