Barbadillo’s Premium Sherry Collection, which includes six distinct oxidized styles. Each style is crafted to reflect traditional Andalusian character and the finesse of extended aging under oxidative conditions.

Amontillado: Amber in colour with a nose of toasted hazelnuts, antique wood, and a subtle saline edge. On the palate, it’s dry and elegant, with flavours of roasted almonds, dried orange peel, and a lingering, tangy finish. Balanced acidity keeps it fresh despite its oxidative depth.Food Pairing: Ham, consommé, aged cheeses.

Oloroso Dry: Deep mahogany hue. Rich, intense aromas of walnuts, leather, and dark spice. Full-bodied and dry, with notes of fig, tobacco, and a long, warm finish that speaks to its age and structure.Food Pairing: Game meats, stews, mushrooms, or aged Manchego.

Oloroso Sweet: Similar oxidative notes as the dry version—walnuts, spice, and oak—but softened with a rich sweetness. Raisins, toffee, and dates dominate the palate, underpinned by vibrant acidity to keep it from cloying.Food Pairing: Blue cheese, dark chocolate desserts, or spiced fruit tarts.

Palo Cortado: A rare and complex style, showing both the finesse of Amontillado and the depth of Oloroso. Aromas of citrus peel, dried flowers, and toasted nuts. On the palate, dry and silky with notes of caramel, cedar, and a persistent, elegant finish.Food Pairing: Duck, foie gras, or grilled tuna.

Moscatel: Golden-brown and aromatic with floral orange blossom, honeysuckle, and ripe apricots. Sweet but balanced, showing flavours of candied citrus, tea leaves, and a touch of spice.Food Pairing: Fruit-based desserts, creamy cheeses, or as an aperitif with spiced nuts.

Pedro Ximénez (PX): Viscous and inky black with an intense nose of raisins, molasses, espresso, and dark chocolate. The palate is lusciously sweet, showcasing dates, treacle, and a long syrupy finish. Powerful but harmonious.Food Pairing: Vanilla ice cream, stilton, or poured over desserts.
