Champagne Billecart-Salmon was founded in 1818 following the marriage of Nicolas-François Billecart and Elisabeth Salmon. Located in Mareuil-sur-Aÿ near Épernay, the House remains family-owned, today led by seventh-generation Mathieu Roland-Billecart.rrChef de Cave François Domi retired in 2016 after 30 years, succeeded by Florent Nys, who joined in 2005. Vineyard management is overseen by Denis Blée. Together with sixth-generation François Roland-Billecart and Antoine Roland-Billecart, they form part of the seven-member tasting committee guiding the House style.rrIn the 1950s, Jean Roland-Billecart pioneered low-temperature fermentation in stainless steel â€?now a hallmark preserving fruit freshness. Today, wines are fermented in stainless steel, temperature-controlled large oak casks, small oak barrels, or a combination, depending on the cuvée.rrBy 2020, production drew on 300 hectares: 100 hectares estate-owned and certified organic in 2025; 100 hectares under contract (herbicides and chemical fertilisers eliminated in 2019); and 100 hectares from grower partners. The vineyards span 40 crus, mostly within 20 km of the winery. In 2017, the House achieved High Environmental Value certification.rThis sixth wine highlights Chardonnay from Mesnil-sur Oger, a historic terroir of the Côte des Blancs, classified as a Grand cru. Exclusively from the 2014 vintage, this wine benefits from a slow and meticulous aging on lees during a period of 82 months. A selective approach is used, based on the purity of the fruit and the balance of flavors.rrWeather: 2014 was characterised by mild temperatures and frequent rainfall and a few weeks of high temperatures, a very solid vintage with good ripeness and acidity. Flowering began in June and summer was a combination of dry, wet and cold spells. Some regions saw some disease and Meunier in the Marne Valley didn’t have a great year and some of the Pinot Noir with its thinner skin made it more difficult for the red grapes. Harvest took place from 8th to 20th September. A year where it was necessary to select the red grapes carefully to maintain high quality. In general Chardonnay is the star of the vintage.rrTechnical Information:rVineyards: 100% Grand Cru â€?Mesnil-sur-Oger from the Côte des BlancsrGrape Varieties: 100% ChardonnayrLees Ageing: 7 yearsrBase Wine: 2014rDisgorged: November 2022rDosage: 5.6 g/lrVinification: Stainless Steel TanksrDrink: Now to 2030rrTasting Note:Its sensory development leans on distinguished aromatic floral notes, which speaks to its great minerality of fruits.
