Bin 707 2021 CabernetSauvignoncomes from Coonawarra, Barossa Valley and Wrattonbully and is aged for 16 months in 100% new American oak barrels before bottling. On the nose, the wine has aromas of vanilla and cedar, accompanied by notes of blackcurrant and cocoa. At this stage, the aromas are reticent, but on the palate the tannins, then the fruit, hit hard. This is a powerful wine that needs time to soften and show all its complexity and grace. 2021 was a magnificent vintage: long, fresh, elegant and layered.
