Champagne Bollinger owns an impressive 178 hectares of vineyards, of which 85% are in Grand Cru and Premier Cru villages. Their land is spread over seven main villages: Aÿ, Avenay, Louvois, Tauxières and Verzenay planted with Pinot Noir; Cuis with Chardonnay; and Champvoisy with Meunier. Bollinger are one of the few Houses to produce the majority of their own grapes for their blends. Pinot Noir represents 60% of the House’s vineyards and defines the House style: complex and powerful with remarkable structure. In 2012 Champagne Bollinger was certified High Environment Value (HEV) this certification rewards a number of environmental procedures implemented at the Maison.rrTo celebrate their 40 year partnership, Champagne Bollinger and 007 pay tribute to their shared heritage and with the 25th instalment of the James Bond series just round the corner no better time to buy a 007 champagne. The House has created a limited edition wine dedicated to 007, with a 2011 vintage inspired by the world of Bond. The jet-black 75cl bottle is adorned with the number â€?5â€? formed from the titles of the previous films, which are similarly etched on the glass of the wooden box. The 2011 vintage, an atypical year, inspired Cellar Master to produce a unique champagne, created entirely from Pinot Noir from the Grand Cru village of Aÿ, where the House was first established in 1829. This is the first time that both the vintage and village have been used exclusively by Bollinger to make a dedicated wine. The excellent 2011 harvest in Aÿ, produced complex, powerful and harmonious Pinot Noirs, fully expressed in this characterful wine.rrWeather: The 2011 vintage was a continental, sunny year with a real winter that was very cold and dry followed by a glorious sun-filled summer and almost no rain in August and September. These boxes were originally released in October 2019 to coincide with the release of No Time to Die, unfortunately the film release was delayed several times before it premiered on 28th September 2021. Still in 2024 I am amazed by the demand for these magnificently designed boxes with their bottle, they have become super scarce and are still selling well.rrTasting Note: To the eye this has a deep golden colour, demonstrating the wine’s maturity. The vintage boasts a refined complexity on the nose, with hints of hazelnut, vanilla and citrus fruits. On the palate, the maturity of this Champagne shines through yet remains fresh and lively, with subtle flavours of plum and honey adding real character.
