The primary fermentation is stopped before completing and a secondary fermentation happens in the bottle and no expedition liqueur (sugar) is added at the end. ‘Pet Nat’ or ‘pétillant-naturel’ means slightly sparkling in French – a style which comes from the Méthode Ancestrale.
