Nutty, Spicy & Complex Single Malt Irish Whiskey

Aromas of treacle toffee and sweet spices are followed by flavours of caramelised peaches, mango and toasted nuts. The lingering finish has notes of jammed berries leading to a silky milk chocolate finish.

• Matured for at least 16 years in Oloroso sherry butts and bourbon barrels before being sun-drenched in port pipes for up to a year

Cellaring: Once opened, Whiskey is best to consume within six months to two years. Food Pairing: Good soda bread (or sourdough) and farmhouse butter, mature cheddars, smoked cheeses, smoked cured meat. Fresh seafood, particularly fatty fish such as salmon or monkfish with whiskey cream sauces, BBQ duck, ribs and pulled pork | ?️ Serve at room temperature, around 18-23 °C

STORY BEHIND THE WINE

Two whiskeys are matured for 16 years, one in a bourbon barrel and the other in sherry, before being brought together in a sweet port-infused cask for up to a year.
