The little-known Pecorino grape (not the cheese!) is indigenous to the central wine regions of Italy. Archivio comes from Chieti in the Marches.
It is a pale skinned and grows well at altitude, up to 1000m �hardy and resilient in cool temperatures.
Traditional vinification employing a reduction technique is used in the making of this wine. There is an initial pressing, then four hours maceration followed by a further soft pressing and cooling of the must. Fermentation of about ten days is at a controlled temperature, it is then transferred for a long contact with selected yeasts on the lees before being bottled.
Vibrant yellow colour; intense and complex nose of apricot and banana with subtle spice notes. The palate is well structured with exotic fruits balanced with mineral notes.
Match with fish based starters, main courses of grilled fish and simple white meat dishes; or the cheese of the same name!
