Produced at Altima Estate, in the heart of the cool Elandskloof mountains, this Chardonnay comes from high-altitude vines harvested by hand, then vinified without enzymes in 300-litre barrels with spontaneous fermentation. Eight months of ageing on lees, with partial malolactic fermentation, gives the wine volume, precision and balance. The nose expresses itself with finesse, offering aromas of nectarine, orange peel and vanilla biscuit, carried by a chalky and subtly woody structure. On the palate, the liveliness of citrus fruits gives way to a silky texture, where freshness and elegance are balanced until a salty and persistent finish, all in restraint.
