A blend of Petit Manseng and Gros Manseng, from 10-year-old vines grown biodynamically (certified by Demeter), and planted on top of the hills, at 350 meters above sea level, on Kimmeridgian limestone. Manual harvest. Natural vinification: direct pressing, with some of the grapes previously destemmed. Fermentation in barrels that have seen several wines. 6 months of aging on laths, disgorged. Unfined, unfiltered, no added sulfites. Less than 5 grams of residual sugar per liter, this is an extra-brut.
