Cervaro della Sala promises an exceptionally clean, linear presentation with salty mineral tones, plenty of stone fruit and tart apples. The wine is fermented in oak and aged in new and used barrels. No malolactic fermentation is used on theChardonnay , adding a touch of Umbrian rusticity and authenticity. There are hints of flint and matches. It is medium to full-bodied, with a fine phenolic and acidic structure that energises the wine, and a complex aftertaste of subtle fruit and pastry. A few rare bottles are available as limited editions.
