In the heart of Chablis, Domaine Louis-Michel et Fils is one of the oldest estates in the appellation. The chalky soils and cool climate of Chablis produce a perfectly lively, racy white wine that tastes a little different from the Chardonnay of the rest of Burgundy. This Chablis village is very typical of its terroir, with aromas of white-fleshed fruit, purity and roundness. It is a very fine, precise white Burgundy with good density, crystalline citrus notes on the palate and a touch of minerality on the finish. Louis-Michel’s philosophy of wanting to express all the influence of the terroir is very well illustrated here. A perfect accompaniment to roast chicken or grilled filet de sol.
