Sans A hedonist’s dream from one of the great Champagne houses. There are many technical factors that have led to Bollinger`s richer, yet subtle house style. Firstly, a large proportion (85%) of the grapes are from grand cru vineyards, and 60% of the blend is pinot noir both of which contribute towards the generous and concentrated style of the wine. A proportion of the wine (approximately 15%) underwent its first fermentation in oak barrels, adding further complexity, and around 50% of the non-vintage blend is made up of reserve wines, a higher-than-average proportion, that contributes to the consistency and depth of flavours of this Champagne. Bollinger is also allowed to age in cellar, on the lees, for a minimum of 36 months, (twice the legal minimum) before disgorgement, allowing these lees-y, brioche flavours to develop and gain balance. All of this care and attention has cemented the popularity of this wonderfully deep yet elegant, successful house style.
