Virgin Wines have been working with Gyéjacquot for over a decade as, year after year, the Buying Team has been wowed by the quality of their Champagne. Managed by brothers Cyril and Frédéric Gyéjacquot, the Champagne house prides itself on meticulous vineyard care and the belief that “Only good grapes can produce good wine.” Cyril focuses on winemaking, while Frédéric tends to the vineyards – though they are both very hands-on across all parts of the business. Nestled in the Côte des Bar, their 19 hectares of vineyards sit on limestone subsoils of Kimmeridgian clay, enhancing the Chardonnay’s freshness and the Pinot Noir’s minerality. With Pinot Noir as the dominant grape variety, supported by a small amount of Chardonnay, Gaston Declos Brut NV boasts power and elegance, delivering fruity, round, and rich flavours. Notes of crisp red apple, blood orange, fig, cinnamon, and pastry create a Champagne that is both elegant and structured.
