ThePinot NoirandGamayvines, which are on average 20 years old, flourish on a terroir of clay, silica and sand. The grapes macerate and ferment with the pomace for 6 to 8 days to extract maximum aromas and colour. The pomace is then gently pressed to avoid adding harsh, hard tannins. After malolactic fermentation, the wine is stored in underground vats, without fining, until bottling. The wine has a crimson colour with ruby highlights and powerful aromas of red fruit. Round, very fruity and persistent.
