Sans Pommeau de Normandie is a blend of three parts fresh apple cider and one part Calvados. The appellation requires a minimum ageing of fourteen months in oak, but at Christian Drouin, they extend that to up to four years. The extra ageing delivers a better-balanced drink with little to no apparent alcohol. Drouin also takes particular care when choosing their apples, aiming to obtain a flavour that’s neither too sweet nor too heavy. Pommeau de Normandie’s fruit exuberance makes it the region’s favoured aperitif.
