A sparkler of great purity and drive from 100% Pinot Noir grown near the wonderfully named Saint-Bris-le-Vineux

Hand harvesting, sorting, destemming for 50 to 100% of the grapes depending of the year. 24 to 48 hours of maceration. The alcoholic and malolactic fermentation are 100% completed under low temperature. The vinification is 100% in stainless steel vats. After 18 months on lees, the disgorging is made without dosage, giving an Extra Brut Cremant, with no sugar added.
