Colpasso Nero dAvola Appassimeto Nero d’Avola is made using the ancient Appassimento method, where around a quarter of the grapes are semi-dried to add an extra layer of complexity to this rich smooth red. The grapes are dried for about 30 days on trays in a ventilated loft until they lose at least 25% of their natural weight.
