Sans Moscato was gently pressed to a stainless steel tank where a special yeast was added that enhances aroma. The wine was then cold fermented at around 10-12 degrees Celsius until about 6.5% alcohol was produced. To stop fermentation, sulphur was added and the temperature was quickly lowered to 0 degrees Celsius.
