Cuvée Empire 2023 is a biodynamic sparkling wine from Corsica, produced by Jean-Charles Abbatucci and his daughter Faustine, made of Barbarossa.

100% Barbarossa from vines planted on granitic sand and farmed biodynamically — a practice the Abbatucci family has embraced for over 20 years (certified Demeter and Biodyvin). Hand-harvested. Vinification: whole-cluster direct press, gravity settling for 24–48 hours, then alcoholic fermentation in stainless steel, followed by 4 months of ageing on lees in the same tanks. Traditional method: addition of liqueur d’expédition, secondary fermentation in bottle, and 24 months of ageing on laths. Extra brut, dosage of 4 g/L.
