Dandelion Lion’s Tooth of McLaren Vale Shiraz-Riesling 2021 is the venture of Zar Brooks and his wine-making wife Elena, with wines from the Barossa and Eden Valleys, Fleurieu and McLaren Vale. Made up of a blend of 95% Shiraz and 5% Riesling.

The vineyard encourages the growth of dandelions as they suppress winter weeds and provide mulch in the summer. The Shiraz grapes were hand-harvested and whole-bunch fermented with stalks and placed in open fermenters to sit on top of the Riesling skins for 11 days. The wine remained in the barrel for 18 months before being racked and bottled without filtration or fining.
