It is fermented from natural yeast (yeast naturally present in the grapes) and aged in used French oak barrels in order to produce a complex wine without excess woodiness. It is a balanced wine with a great stucture and good density. Diosares has quite a remarkable finesse with red fruit that is always pure and these few years of ageing make it a perfect bottle to open now!
